Soil Type: The Grenache vines at John Sebastiano Vineyard are rooted in a steep, southeast-facing hillside composed predominantly of sand at the eastern edge, transitioning to sandy clay loam towards the west and lower sections of the block. This diverse soil profile imparts a distinctive mineral quality to the wine, reminiscent of the rugged, untamed landscapes featured in classic Western films.

Elevation & Aspect: The strategic southeast-facing orientation ensures optimal sun exposure, contributing to the grapes' development of intense flavors and aromas while maintaining relatively low sugar levels, a hallmark of the vineyard's unique terroir.

Grape Varieties: This cuvée is crafted solely from Grenache, carefully selected from a block that is typically harvested later in the season to achieve a balance of ripeness and acidity, resulting in a wine characterized by its cool, energetic profile and mineral complexity.

Winemaking: The cool 2021 vintage led to a decision to destem 100% of the Grenache, moving away from the usual practice of incorporating up to 25% whole clusters. Native yeasts initiated fermentation in open-top fermenters, followed by aging in large French oak barrels, which included spontaneous malolactic fermentation, enhancing the wine's texture and depth.
