These areas are characterized by thin, clay and limestone soils that naturally limit crop yields, fostering vines that produce concentrated and expressive fruit. The estate adheres to "lutte raisonnée," using only organic compost and avoiding herbicides, which highlights their commitment to sustainable viticulture practices.
  • Wine: The Domaine Hubert Lignier Bourgogne Passetoutgrain is a premium example of its humble appellation, blending 60% Gamay and 40% Pinot Noir from a 0.4 hectare plot within Morey-Saint-Denis. The Gamay vines, dating back to 1960, and the younger Pinot Noir vines from 1998, contribute to a harmonious balance of fresh, vibrant fruit and structured depth. Aged entirely in used barrels and bottled without fining or filtration just before the subsequent harvest, this wine offers a pure, unadulterated expression of its unique terroir and varietal composition.
